Another great recipe from Brittany! I made these for our Mother’s Day get together and the family absolutely LOVED them. I didn’t end up doing the filling (only because I was lazy) instead I iced them with a cinnamon maple cream cheese frosting topped with finely chopped honey roasted pecans. My son said, “I haven’t even had carrot cake that tasted this good!” My search for a good carrot cake cookie recipe is over.
